The chef, who combines Edo‑style sushi techniques with extensive experience in Japanese cuisine, offers a course that highlights the natural character of each ingredient through both exquisite nigiri and carefully crafted dishes.
A veteran owner‑chef with over thirty years of experience, he has served as second‑in‑command at a long‑established restaurant, managed his own establishment, and worked as head chef at a Michelin‑starred restaurant. Drawing on his cultivated skills and expertise, he prepares each piece of sushi with meticulous attention.
The signature bluefin tuna nigiri features carefully selected wild bluefin tuna. By removing sinews and blood clots and applying precise knife work, the chef achieves a melt‑in‑your‑mouth texture. Another popular item is the blackthroat seaperch from Nagasaki, cured in kelp for a full day, seared over high‑temperature charcoal, and finished with seaweed salt.
The sushi rice is a blend of red vinegar, white vinegar, and rice vinegar, with the proportions adjusted according to the day’s temperature and humidity to create perfect harmony with the toppings.
