Located in historic Nihonbashi, Unagi Kappo Keisuke offers refined cuisine crafted by a chef trained in Kyoto. Guided by the philosophy of Shu‑Ha‑Ri—preserve, break, transcend—our seasonal courses harmoniously blend tradition with innovation, centered around exceptional eel.
Our signature eel dishes reflect meticulous craftsmanship. The 7‑day dry‑aged Shirayaki (unseasoned grilled eel) is presented in a unique three‑stage tasting inspired by Shu‑Ha‑Ri. Guests can also enjoy regional Unadon, showcasing the distinct character of eels from Kagoshima, Miyazaki, Aichi, and Shizuoka—an experience where tradition and creativity meet.
Attention to detail is at the heart of our cuisine. Rice is cooked using Nihon‑sui (Ippai‑sui), a renowned mountain spring water personally collected by the chef, and our richly layered, ryotei‑style dashi—prepared with premium kelp, bonito, sardine, and mackerel—enhances seasonal delicacies such as wild boar, soft‑shelled turtle, and blowfish.
To complement the dishes, we offer an extensive selection of rare sake, with a focus on exceptional labels from the Tohoku region.
