Waketokuyama （分とく山）

The chef's choice course, which includes the classic "Isoyaki Abalone," changes its menu every two weeks to allow customers to enjoy seasonal ingredients in the most delicious way possible, and prepares only the food for customers who make reservations that day, which is the job of Waketokuyama, which values ​​the texture of the ingredients.

This is a Japanese restaurant in the style of a chef's kappo restaurant, offering traditional and original dishes, and only the chef's choice course is offered so that customers can enjoy seasonal ingredients and a sense of the season.

A variety of cooking methods inherited from the previous head chef, Hiromitsu Nozaki, "do not overpower the broth" to bring out the original flavor of the ingredients.

At the end of the course, the rice cooked in a clay pot, which changes with each menu, will give you an even more seasonal feel.

  • Guests who cannot consume Kombu Dashi (Kelp Stock). *Guests with shellfish/crustacean allergies or vegetarians must inform us whether they can consume Kombu Dashi.

  • Guests who require complete removal of all animal products (including dashi and seasonings).

  • Guests who require a strict gluten-free diet (including Miso and Shoyu/Soy Sauce). *Please note there is a possibility of trace amounts of gluten during the preparation process.

• Arrival time:

  Please arrive 5 minutes before your reserved time to ensure a timely start of your meal. If you do not contact us and exceed your reservation time, it will be automatically canceled.

• Dress Code:

  Dress code is smart casual (Please refrain from wearing T-shirts, shorts, and sandals when you visit.)

• Children:

  ・Children aged 13 and over must order the same course as adults.

  ・Children are only permitted in private rooms (additional JPY 11,000). Please note that private rooms may not be available if fully booked.
