Special Course with Shiki-bōchō (Traditional Knife Ceremony) Viewing

The Shiki-bōchō presented in this special course is a traditional Japanese knife ceremony established approximately 1,200 years ago during the Heian period by the Emperor of the time, and first performed within the Imperial Palace.
Although it is not ordinarily open to the public, the ceremony may be viewed only three times a year when it is dedicated as an offering at a shrine. Among the several schools that preserve this tradition, our restaurant carries on the lineage of the Ikama-ryū Shiki-bōchō school.
Shiki-bōchō is not a display of cooking technique nor a performance using ingredients. The foods we consume were once living animals and plants that existed in nature. This ceremony has been handed down through the centuries as a ritual expressing reverence and gratitude toward nature and all forms of life.
During the ritual, the fish is handled without direct contact by hand. Instead, the practitioner uses a ceremonial knife and manabashi (ritual chopsticks), demonstrating techniques refined through many years of disciplined training.
Like the tea ceremony or martial arts, Shiki-bōchō places great importance on prescribed forms and deliberate movements. Its purpose is not to showcase technical prowess, but to embody purity, humility, and gratitude toward nature and life through each carefully executed gesture. The essence of the ritual lies in how these values are conveyed within a limited span of time.
In Japan, it has long been believed that spirits and life dwell within all aspects of nature—mountains, rivers, oceans, animals, and plants alike. This deep respect for nature is one of the fundamental principles at the heart of Japanese cuisine.
Through the Ikama-ryū Shiki-bōchō ceremony, we hope you experience not only the beauty of Japanese culinary tradition, but also the spirituality and culture that underpin it.
(The ceremony will be performed by either the 30th or 31st headmaster of the Ikama-ryū school.)
Following the ceremony, you are invited to enjoy a special course menu created exclusively for this experience.
