This specialty restaurant was opened in June 2018 by Keiji Tokito, who spent fifteen years refining his craft at Azabu Nodaiwa, a renowned eel establishment with over two centuries of history. While honoring tradition, he aims to deliver a new and memorable dining experience.

Mr. Tokito also studied diverse European food cultures during his time in Paris, and he draws on that background to present a unique culinary vision: the fusion of eel and French cuisine. The menu features both classic dishes—such as traditional unajū grilled carefully over charcoal in a kamado (traditional charcoal-fired kiln)—and innovative creations including eel meunière, showcasing a distinctive blend of French technique and Japanese sensibility.
