Sushi Tanaka is a newly opened sushi restaurant in the Azabu Juban/Shirokane area. Chef Ryu Tanaka began his culinary journey at the age of 16. In 2020, he became the second-in-command at the main branch of Sushi Rizaki, and by 2021, he was entrusted with launching the Aoyama location as its head chef. In 2024, he realized his long-held dream of becoming independent by the age of 30, establishing his very own restaurant in Minami-Azabu.

Being from Amakusa, Kumamoto, which is blessed with abundant seafood, he sources many of his carefully selected ingredients from his hometown. Amakusa, consisting of 120 islands of various sizes, is a “treasure house of ingredients” nurtured by its mild climate. Surrounded by three kinds of sea including the Ariake Sea, Amakusa is rich in fishery resources, and the variety and taste of the seafood landed here are well known.

What is also unique is that the two types of rice used for sushi rice are cooked separately and then combined on the rice table. This remarkable new restaurant offers dishes filled with an overwhelming passion to bring out the unique flavors of each ingredient.
