
About Kuro Satsumadori Renka
At the age of nineteen, Chef Kasai began his culinary journey at a bustling yakitori restaurant in Shinjuku, where he honed his skills as a grill master. Seeking broader expression, he spent three years training at a French restaurant in Setagaya, refining his sensibilities in vegetable preparation and heat control. After serving as head chef in Akasaka, Meguro, and Otsuka, he opened his own restaurant, Kuro Satsumadori Renka, in September 2024. The restaurant uses only Kuro Satsuma chicken from Kagoshima Prefecture — a breed whose quality is elevated through meticulous, end‑to‑end production. Kasai specifies the optimal rearing period for both hens and roosters, sourcing each bird under strict quality control.
Because the flavor of chicken is profoundly influenced by temperature, skewering is done swiftly at 5°C or below, followed by immediate refrigeration. Every step, from preparation to grilling, is precisely orchestrated. He pays close attention to charcoal arrangement and heat application, slowly cooking each skewer with carefully measured salt while monitoring the core temperature. This deliberate approach draws out the full depth, texture, and umami of Kuro Satsuma chicken.
A resident sommelier curates a selection of roughly forty wines, with a focus on Burgundy and the United States. In a counter‑centered space where guests can observe the craftsmanship up close, the restaurant offers an ideal setting for dates, anniversaries, and meals with international guests.
