Established in 1935 as a distinguished branch of the esteemed "Kifuji" inn—formerly a purveyor to the Imperial Household—Kinobu first began as a catering service before evolving into a celebrated ryōtei (Japanese traditional restaurant).

The third-generation chef, Takuji Takahashi, aspired to bring Japanese cuisine to a global standard. He moved to Tokyo at a young age, earned a sommelier certification, and trained in France.
