The ingredients—sourced directly from producers across Japan, central markets, fishermen, and hunters—are prepared and aged by working backward from the guest’s visit, ensuring they reach the table in their finest condition. In January 2026, the restaurant relocated to the Institut français du Kansai (Consulate General of France in Kyoto), a cultural institution officially recognized by the French government and designated as a Registered Tangible Cultural Property of Japan.
