We take pride in offering authentic Edomae-style sushi, rooted in tradition and crafted to draw out the natural flavors of each ingredient. Beyond the selection of toppings, we devote meticulous attention to the shari (sushi rice)—the balance of rice, vinegar, and salt—as well as to our three varieties of nikiri soy sauce, each used to achieve the ideal harmony among sushi’s three essential elements—toppings, rice, and soy sauce.
Whether at the counter or in a private room, each piece is served one by one, shaped fresh by the chef. Please take your time and savor every bite, prepared with care. Seasonal appetizers and small dishes, which showcase the essence of our cuisine, are also an integral part of the experience.
Our curated selection of Japanese sake and wines is chosen for the way each pairing resonates with our sushi and seasonal dishes, deepening the lingering pleasures of the meal.
