By controlling every detail—temperature, humidity, and aging—we draw out the fullest expression of each ingredient’s natural flavor. Centered around premium tuna from Yamayuki, the menu features seasonal delicacies, sashimi, and grilled dishes, offering the finest the day has to offer. Each piece of nigiri is brought to its ideal state, resulting in a subtle yet deeply expressive flavor.
