Sushi Koharu is a sister restaurant born from the former location of the renowned Ginza Harutaka, a Michelin three‑star establishment, whose original premises it has inherited.

Chef Kurita has supported Harutaka since its opening, serving as the second-in-command and honing his craft for fifteen years. Even today, he visits the market alongside Harutaka’s head chef, carefully selecting ingredients and preparing them together, faithfully carrying forward the techniques and spirit cultivated at Harutaka.

With a deep understanding of the seasons, Chef Kurita personally chooses the finest ingredients of the day. For the shari, he blends two varieties of Yamagata-grown rice—never using newly harvested grains—to achieve a gentle sweetness and low stickiness. The rice is cooked several times throughout the day, with its temperature meticulously adjusted to complement each topping, resulting in sushi that is glossy, balanced, and full of flavor.

The interior, crafted to highlight the natural texture of wood, offers a serene atmosphere where warmth and refinement coexist. Spaciously arranged counter seating allows guests to relax and enjoy a quiet, fulfilling moment without formality.

  If you have any specific food allergies or ingredients you cannot consume, please inform us in advance. If you have restrictions on two or more items from shrimp, squid, octopus, silver-skinned fish, or fish roe, we are unable to accept your reservation.

• Arrival time:

  Please arrive 5 minutes before your reserved time to ensure a timely start of your meal. If you do not contact us and exceed your reservation time, it will be automatically canceled. If 30 minutes pass without any notice, your reservation will be cancelled and a 100% cancellation fee will be charged. If you expect to arrive late, please be sure to contact us by phone. If you arrive late or leave the restaurant before your scheduled time, we may not be able to offer you a portion of your course.
