The restaurant offers a distinctive course that pairs Yamayuki Group’s renowned high-quality tuna with authentic 100% buckwheat soba and champagne—an experience unique to this establishment.

Chef Miura has spent nearly twenty years honing his craft, training at celebrated Japanese restaurants such as Kyo-aji, Kanda Owariya Honten, notable soba restaurants, and Ginza Onodera, where he also mastered tempura. His 100% buckwheat soba uses heirloom varieties from Fukui and Toyama, with the flour selected for each dish and the noodles made fresh on the spot. The menu showcases dishes that broaden the possibilities of soba, including buckwheat galettes and soba sashimi paired with Yamayuki’s tuna, as well as a deeply flavorful broth made from tuna flakes and Rausu kelp.

The interior features a calm, intimate atmosphere centered around an L-shaped counter, complemented by a single table.
