The name of the restaurant Ichigo means “standing shoulder to shoulder with the best,” reflecting our high ambition to someday match the skills of the top artisans.

The owner personally goes to the Toyosu market to select the fish from trusted suppliers.

We use a custom-made Nambu ironware rice kettle to cook the sushi rice over a high flame, standing out firmly.
