A chef who spent over ten years honing his craft at a renowned yakitori restaurant now pursues classic, uncompromising yakitori. He carefully selects premium local and branded chickens, including Hinai Jidori, sometimes visiting producers himself to confirm the breeding environment and the philosophy behind their work, purchasing only whole birds that meet his exacting standards.
Each morning, only the chickens needed for that day’s service are butchered one by one, with close attention paid to the texture and grain of each cut before being precisely skewered. Using the finest Kishu Binchotan charcoal, he grills over intense, close heat, achieving crisp, fragrant skin and juicy, succulent meat. His focus is on drawing out the chicken’s natural flavor through perfectly controlled cooking. Seasonal vegetables are also incorporated to reflect the flavors of the season.
Whether for an after-work dinner, a meal with your partner, a date, or an important business occasion, guests can enjoy yakitori that embodies honest craftsmanship and a true sense of character.
