2. J

J, the sister restaurant to T, pushes the same T-bone idea deep into aging territory. Here the cut is Arita beef from Miyazaki, mold-aged for 100 days by a specialist who manages temperature and humidity throughout. Grilled over high-heat charcoal, the aged T-bone carries deep aroma and concentrated umami without ever feeling heavy. The course opens with a piece of theatre — the whole loin is carved tableside with a blade the size of a Japanese sword. 3. IDEA Ginza

IDEA Ginza built its reputation on one technique: Kobe beef fired in a custom clay kiln. Charcoal drives the kiln to around 800°C, crisping the exterior while keeping the centre juicy and rendering off excess fat — so the beef lands lighter than anything off a flat grill. The chef trained as an assistant in a two-Michelin-star kitchen, and the restraint shows: only prime sirloin and fillet make the cut, aged several weeks to deepen flavour. 4. Empire Steak House Roppongi

Empire Steak House Roppongi brings genuine New York dry-aging to Tokyo, with three appearances on Japan's Best 100 steak and teppanyaki ranking to show for it. The beef is USDA Prime Black Angus, aged at least 28 days in a room where temperature, humidity and airflow are all controlled. That aged beef is seared fast at around 900°C, giving you a crisp crust over a juicy centre. A 1,000-bottle cellar, weighted toward American labels, stands behind it. 5. Vesta

Vesta is where to go for Sanda beef, a Hyogo brand rarely seen even in Tokyo. The best examples melt at body temperature, with fine, tender grain and concentrated flavour. 9. Ginza Hirayama

Ginza Hirayama does something almost no one else attempts: it specialises in A5 Japanese Black fillet, and nothing else. Rather than chase a single region or brand, it sources the day's best Black wagyu from wherever it's strongest. The cooking is patient — a dedicated charcoal kiln and binchotan, worked slowly to coax out the beef's umami. There is no salt, no pepper, no seasoning at all; you taste the fillet exactly as it is. A cellar of more than 1,000 wines lifts that clean, delicate flavour. If you think you know fillet, this is the counter that reframes it.

10. Black Hair Wagyu Restaurant HACHI

12. Peter Luger Steak House Tokyo

Peter Luger Steak House Tokyo is the Japanese outpost of the Michelin-listed New York institution, and it runs on the same playbook. The beef is identical to the original — USDA Prime, the top American grade. It's dry-aged in a ground-floor aging room of around 100 square metres, using a house method the restaurant keeps to itself. That process suppresses off-aromas and muddiness while pulling the beef's natural character forward. Seared hot and served on plates heated past 100°C, it lands exactly as it does in Brooklyn.
