Chef Yuya Hirayama redefines steak with his tender and juicy charcoal-grilled Chateaubriand.
Using a dedicated charcoal oven, he takes 30-40 minutes to carefully cook the finest wagyu beef, locking in the delicate flavors without using salt or pepper.
In 2011, he opened “Ginza Hirayama,” breaking the conventions of teppanyaki with his unique method.
Sourcing the best wagyu and offering over 1,000 wines, he pairs exquisite red wines with the delicate Chateaubriand, promising an unforgettable dining experience.
