J, the sister restaurant to T, pushes the same T-bone idea deep into aging territory. Here the cut is Arita beef from Miyazaki, mold-aged for 100 days by a specialist who manages temperature and humidity throughout. Grilled over high-heat charcoal, the aged T-bone carries deep aroma and concentrated umami without ever feeling heavy. 3. IDEA Ginza
IDEA Ginza built its reputation on one technique: Kobe beef fired in a custom clay kiln. 12. Peter Luger Steak House Tokyo
Peter Luger Steak House Tokyo is the Japanese outpost of the Michelin-listed New York institution, and it runs on the same playbook.
