After training in Paris at the restaurant named Clos Des Gourmets, the chef opened his own restaurant with the same name in Japan. His signature dish, Tête de Cochon, made from roasted pig’s head, is a legacy from his mentor and he inherited his passion as well.

He creates recipes for other menu items based on seasonal ingredients. You can enjoy a different taste every time you visit. He is also particular about the ingredients he uses, personally meeting with the producers and selecting only the best quality for his dishes. In addition, the bread made with natural yeast is sourced from Chigasaki ``Baker Tradie’', a bakery run by his friend since his days in Paris.
