Owner-Chef Shigeru Muroi has a distinguished career. He refined his skills at renowned establishments such as Arashiyama Kitcho and Nakahigashi, later serving as a private chef at ambassadorial residences and as Head Chef at Nobu locations overseas. His techniques, forged through this rare experience, breathe new life into traditional Kyoto cuisine.

The essence of the restaurant lies in its uncompromising dedication to ingredients. Chef Muroi sources up to 80 varieties of freshly harvested Kyoto vegetables from local contract farmers in areas such as Ohara. His commitment extends even to the water: each day he personally collects natural spring water from the Kyomi Pass to prepare the dashi and cook the rice.

In this serene space, limited to just eight counter seats, guests can savor exquisite dishes that highlight the chef’s masterful technique and the deep flavors of seasonal ingredients. It is an extraordinary dining experience recognized by gourmets both in Japan and abroad.
