Located in Kitashinchi, “Ryoriya Inaya” is a Japanese restaurant opened by the owner, HIROKI INAYA, after training at the Michelin two-star restaurant “Uemura” in Kitanozaka, Kobe. The restaurant's motto is to provide customers with pleasure and excitement by respecting the history and traditions of Japanese cuisine and using delicate techniques to bring out the best in high-quality dashi broth and seasonal ingredients.

At “Ryoriya Inaya”, we pay particular attention to “dashi” (Japanese soup stock) and “shio” (salt), which are important elements of Japanese cuisine. The dashi broth is carefully drawn from honkare-bushi (dried bonito flakes) made from single-line bonito from Makurazaki, Kagoshima, and has a deep and elegant flavor. For salt, we use our original salt made by a salt artisan to bring out the natural flavor of the ingredients to the fullest. Ingredients are carefully selected to be the most delicious in season, with a focus on organic vegetables and fresh seafood shipped directly from the production area. In order to bring out the best of the ingredients, they are carefully and slowly cooked over charcoal. The menu changes monthly, so you will always have something new to discover. The specific menu is a pleasure to enjoy upon your visit, but we promise to always serve the highest quality ingredients with the best cooking methods.

The restaurant employs an open dining style, which is rare for Japanese restaurants.
