Guided by Japan’s 24 solar terms and 72 pendants, cusavilla embraces the philosophy of serving dishes made from seasonal ingredients at their absolute peak — honoring their natural character and purest flavor.
Chef personally ventures into the mountains and farms surrounding Tokyo, forging close relationships with local producers. Through this hands-on approach, he draws out the fullest expression of each ingredient and artfully elevates it into dishes imbued with a refined Japanese sensibility. Presented on an ever-changing array of artistic tableware, each plate reflects the beauty of the seasons, engaging all five senses. The tasting menu — featuring seasonal treasures such as bamboo shoots, ayu (sweetfish), matsutake mushrooms, white truffles, and crab — offers a journey that delights both the eyes and the palate.
