Tucked away in the backstreets of Kagurazaka, Sushi Kagura offers a unique dining experience where the traditions of Edo-style sushi meet contemporary creativity. Rooted in the principles of the five tastes, five colors, and five cooking methods of Japanese cuisine, the restaurant presents a harmonious blend of authentic sushi and innovative seasonal dishes.
The chef began his culinary journey in traditional Japanese cuisine and has spent over 22 years refining his craft at long-established ryotei, five-star hotels, Michelin-recognized restaurants, and independent establishments. In addition to sushi, he has developed expertise in French, Italian, Chinese, and Southeast Asian cuisines. Drawing on this diverse background, he opened Sushi Kagura in Kagurazaka in 2022.
Valuing every encounter with seasonal ingredients, the chef personally sources seafood from trusted wholesalers at Toyosu Market, as well as fishermen and fishmongers throughout Japan. Each ingredient is carefully prepared using traditional techniques such as dehydration, aging, curing, marinating, and vinegar curing. The nigiri is designed to reach its peak as it is enjoyed in the guest's mouth—a uniquely Japanese expression of pairing. Every element, from the cut of the fish to the texture of the rice, as well as the temperature of both the topping and the sushi rice, is meticulously refined to create the perfect first bite.
The sushi rice is made with Toyama-grown Koshihikari, specially milled using a traditional method by a century-old rice merchant with a Five-Star Rice Meister certification. It is seasoned with a proprietary blend of aged vinegars, black vinegar, and seaweed salt. To complement the cuisine, the restaurant also uses gluten-free soy sauce and plant-based ingredients, achieving a balance of exceptional flavor and thoughtful wellness.
The interior offers a contemporary interpretation of traditional Japanese aesthetics. A striking cypress entrance, a counter framed by elegant bamboo arches, locally crafted tableware from the chef's hometown of Saga, and carefully tended bonsai create a serene atmosphere where guests can enjoy an unforgettable dining experience in comfort.
