A counter‑style French restaurant built around the mesmerizing flames of a wood‑fired oven, where guests can admire the flickering fire up close. At the center of the open kitchen stands a wood oven crafted from white clay from Larnage, France, offering an immersive, live experience of glowing embers and the chefs’ precise movements. The rich, aromatic scent of wood fire fills the room, awakening the appetite and creating a truly sensory dining experience.
The cuisine follows the philosophy of makiyaki—wood‑fire cooking—presented as a course designed to draw out the full character of each ingredient. Seafood and vegetables are simply and fragrantly seared, while meats are slowly and attentively cooked to concentrate their natural umami. After the main course, noodle or rice dishes add a satisfying sense of completion. Even dessert incorporates wood‑fire techniques, leaving a lingering impression that carries through to the very end of the meal.
Leading the kitchen is Chef Keiichi Terada, a remarkable talent who earned a Michelin star in a record‑setting two months. Grounded in French culinary tradition and enriched by techniques honed in Japanese cuisine and charcoal grilling, he creates inventive wood‑fire dishes that move fluidly between classic and modern. Each dish is crafted with carefully selected ingredients from Japan and around the world, finished over the primal yet versatile flames of wood fire.
