At the center of the open kitchen stands a wood oven crafted from white clay from Larnage, France, offering an immersive, live experience of glowing embers and the chefs’ precise movements. The cuisine follows the philosophy of makiyaki—wood‑fire cooking—presented as a course designed to draw out the full character of each ingredient.
