Sushi Tatsuya has opened its doors in Nakameguro as an independent offshoot of Sushi Yoshikawa. A signature dish that has gained popularity on social media, the Toro and Egg Yolk Futomaki features medium-fatty tuna and lean tuna marinated in a secret soy sauce, rolled together with uni (sea urchin) and egg yolk. Enjoy it with a rich red miso and dashi sauce served on the side.

Another inventive specialty, the “Unagi Dog,” pairs fluffy, fatty eel with vinegared rice and a house-made dressing, balancing richness with refreshing acidity—a dish not to be missed. The sushi is handed directly from the chef to the guest, making even the moment of receiving it part of the Yoshikawa experience.

The sushi rice is seasoned with red vinegar aged for six years using sake lees, creating a mellow flavor that enhances the natural taste of each ingredient without any sharpness or harshness. Nori seaweed is sourced from a 150-year-old specialty producer in Gunma, offering a rich aroma of the sea and a delicate melt-in-the-mouth texture.
