The restaurant name "Kai" refers to the oar used to paddle a boat in Japanese. It signifies “to explore the wide sea," and it evokes the image of the sea breeze and the fish swimming briskly, increasing the anticipation for the sushi.

The seafood is carefully selected by the owner every morning at the Toyosu Market, and the tuna is purchased from Yamayuki, a wholesaler specializing in tuna that is trusted by many of the nation's most prestigious restaurants.

Also, the owner, who is from Fukui, wanted to use local Fukui ingredients, such as Fukui rice and sake, and the sushi restaurant is filled with the owner's love of his hometown.
