About
Our goal is to create the prototype of sushi “150 years from now.”
Sushi Fujiro’s "New Edomae Sushi”
Located in Nihonbashi Kayabacho, our restaurant features a traditional Japanese cypress exterior crafted by skilled carpenters. Inside, you’ll discover sunken kotatsu-style counter seats where the chef prepares sushi right in front of you.
Our fundamental principles are “fresh maturity eclectic” (meaning the use of both high-freshness ingredients and those utilizing aging techniques in sushi) and “East-West fusion” (allowing you to experience both Eastern and Western Japanese culinary cultures simultaneously). We offer course menus that respect tradition while presenting cutting-edge sushi. But it’s not just about sushi—the carefully prepared seasonal small side dishes accompanying sake are also exquisite. Get ready for a special sushi experience with delightful flavor contrasts.
