KHAO: An Encounter with Innovative Thai Cuisine in Jimbocho
KHAO, formerly known as "phitsanulok" in Nagoya, has relocated to Jimbocho with a new name and renewed vision, delivering a truly unique Thai dining experience that seamlessly blends Japan’s seasonal ingredients with Thailand’s rich culinary traditions. Koichi Ishiyama and Eri Hozumi, the husband-and-wife duo behind the acclaimed Phitsanulok, bring their expertise to an exclusive reservation-only omakase experience at their intimate eight-seat counter.
At the heart of their signature Thai curry lies Eri Hozumi’s handcrafted "Nam Prik Gaeng"—a skill she perfected over two years of study in Thailand, followed by dedicated research upon returning to Japan. Utilizing Thai herbs and fermentation techniques, she also handcrafts shrimp paste (kapi) and Nam Prik Pao (chili paste in oil). Every day, she meticulously prepares the paste using a traditional Thai stone mortar (khrok hin), referring to herself as a "Namprikker"—one who crafts Namprik. The deep and intricate flavors born from fresh-squeezed coconut milk and her homemade Nam Prik Gaeng are truly captivating.
KHAO’s cuisine is distinguished by its bold use of diverse ingredients, including wild mushrooms and aged meats. Inspired by the limited use of refrigeration in traditional Thai households, they base their culinary philosophy on authentic Thai dishes that harness the potential of matured ingredients, pushing the boundaries to create a uniquely evolved world-class Thai dining experience.
Another highlight is the meticulously curated wine pairings. Themed around "explosion," these pairings explore the uncharted possibilities of harmonizing Thai herbs and coconut sugar with wine.
In a refined setting, immerse yourself in an innovative Thai culinary journey that engages all five senses. Discover a moment of lasting bliss at KHAO.
