In June 2025, the modern French restaurant “mærge” opened in Minami-Aoyama.

Owned by Chef Hideyuki Shibata, who previously earned a Michelin star at the acclaimed "La Clairière" in Shirokane, mærge offers an 11-course menu elevating “honest ingredients” sourced from producers across Japan, refined through impeccable French culinary techniques.

The name “mærge” combines the French word "marge" (margin/space) and the English word "merge." It embodies the idea of framing even unknown ingredients to discover new value. With this vision, the restaurant reconstructs diverse ingredients—such as aged venison, ancient grains, and post-laying spent hens (Arama chicken)—into modern French dishes that are wholesome and vibrant.

The interior is inspired by the ancient Chinese philosophy of the Five Elements. By intentionally avoiding symmetry in its walls, floors, and furnishings, it captures the essence of “unfinished beauty.” The main dining area, surrounded by softly curved walls echoing the round tables, creates a calming and immersive experience.

The brand color is ash—a shade where various tones blend and deepen over time.

  If you have any specific food allergies or ingredients you cannot consume, please inform us in advance. Unfortunately, we cannot accept reservations if there are ingredients that you cannot eat within a wide range.

  If you require vegan options or accommodations for gluten allergies, please contact us at least seven days before your reservation. We may not be able to accommodate requests made after this period, and your reservation may be subject to cancellation without refund. We appreciate your understanding.

• Arrival time:

  Please arrive 5 minutes before your reserved time to ensure a timely start of your meal. If you do not contact us and exceed your reservation time, it will be automatically canceled.

• Dress Code:

  Dress code: Semi-formal

  For the comfort of all our guests and to preserve the dining experience, we kindly request semi-formal attire.

  Please refrain from wearing casual clothing such as jeans, sweatpants, T-shirt, hooded sweatshirts, sneakers or sandals.

  Gentlemen are required to wear a jacket or a collared shirt.
