Chef Akinari Fujita honed his skills in France, spending about 4 and a half years in regions like Normandy, Basque Country, and Lyon, where he trained for 1 and a half years at the Neo-bistro, ”L'Archange" in Lyon. Drawing from these experiences, he considers himself a "construction-style chef" and offers innovative dishes, building upon classical theories.

In his courses, he keeps the composition of each dish to a minimum to leave a lasting impression. Each dish features a single ingredient prepared using multiple cooking methods, resulting in harmoniously crafted creations for you to enjoy.

  Dress code is smart casual (Please refrain from wearing T-shirts, shorts, and sandals when you visit.)
