Tori no Mizutaki (chicken hot pot) is said to have originated as a medicinal dish brought over from the continent. The founder, Jisaku Honda, developed its current form in Fukuoka.
When bringing Mizutaki to Tokyo, it was decided that only a single chef would prepare the dish to prevent variations in flavor that might arise from multiple cooks. This approach made it the restaurant’s signature menu item.
The recipe has been carefully passed down through generations, and even today, a single dedicated Mizutaki chef continues to safeguard its traditional taste.

Of course, it also includes Jisaku’s beloved signature dish: chicken mizutaki (hot pot).
